Prep Time: 30 minutes
Cook Time: 1½ hour
7 large egg whites
470g caster sugar
1 orange zest
2 tsp Zest Pahelo Spice Blend
Dissolve the sugar in the egg whites over a hot water bath slowly whisking in Zest Pahelo Spice Blend constantly until sugar has completely dissolved, approximately 7-10 minutes (careful not to cook the egg whites).
Transfer mixture to a mixing bowl and whisk for 15 -20 minutes or until thick, glossy and very stiff peaks form. Carefully fold in orange zest.
Spoon large mounds onto a greaseproof lined tray, lightly sprinkle with a little Zest Pahelo Spice Blend on each meringue.
Cook in a 120°C oven for 1½ – 2 hours, turn oven off and leave to cool.
Serve with seasonal fruit and whipped cream.
