2 tbsp of Zest Exotic Spice Blend
1 tbsp rice or corn flour
30 ml coconut milk or coconut cream
160g macadamia nuts lightly chopped
200g fish cut into strips
oil for frying
Combine Zest Exotic Spice Blend and flour mix. Whisk eggs & coconut milk together, blend breadcrumbs and macadamia nuts then place each into three seperate bowls. Dust fish strips with spice mix, dip strips in the egg mix and coat strips with macadamia crust. Place in fridge for 30 mins.
Add oil to non stick frying pan and heat on medium. Add fish strips and cook until both sides are golden brown. Serve with rice and salad or vegetables.
